An ideal itinerary for getting the meatiest experience the Memorial Day weekend has to offer

It's back: Aaron Franklin's fourth food and music party with tailgating vibes, Hot Luck Festival, kicks off next week with a stellar chef lineup and great concerts.

To help navigate the multi-part event, Eater knows it would be useful to have a guide to everything you need to know regarding Hot Luck, from tips to a breakdown of the events to must-eat dishes to concert suggestions.

Like any festival, wear comfortable shoes, prep with sunscreen, drink a lot of water (cocktails and beers will freely flow at every event, and temperatures are going to hover in the 100s), and be prepared to eat a lot. Parking for most events will be difficult, especially for East Austin and Red River venues, so opt for ride-hailing apps or cabs. Since music is a big component of Hot Luck, it wouldn’t hurt to pack a pair of earplugs.

For those rolling high with the sold-out Whole Enchilada passes, keep in mind there is early access offered for all events, plus additional parties not available through a la carte tickets. Partial proceeds from this year’s festival will go towards service worker-focused organization Southern Smoke Foundation. Another change to this year’s festival: unlike previous editions, concerts won’t include food components.

With that, here is Eater’s suggested itinerary for optimal Hot Luck eating and enjoyment.

Alas, only those with the all-access Whole Enchilada passes can hit up the first of two events kicking off Hot Luck. The theme of the evening is pizza. Of note, check out pizza expert Chris Bianco’s pie: the Texas Wiseguy with sausage, wood-roasted onions, and smoked mozzarella; Philadelphia pizza expert Joe Beddia of Pizzeria Beddia with a tomato pie with anchovies; and Oakland Arabic bakery Reem’s Reem Assil’s flatbread topped with an Arabic-style cod and smoked ranch-tahini dressing plus chimichurri and beet-pickled fennel. Locally, check out Fermín Núñez of Mexican restaurant Suerte with a pie topped with clams preparados (basically, a michelada-esque mixture with clams), crab, avocado, and a habanero pico de gallo. The evening’s musical guests are DJs Jazzy Jeff and Mel, performing on the outdoor stage.
Where: Mohawk, 912 Red River Street, Downtown
When: 6 to 9 p.m.
Access: All-access Whole Enchilada passes only.

Another Whole Enchilada pass-only event, is the festival’s regular party, which takes over the physical Franklin Barbecue restaurant space and parking lot. The alfresco event takes on a cook-out vibe, including bites from Franklin himself. Elsewhere, Los Angeles chef Mei Lin of fried chicken sandwich restaurant Daybird is serving a smoked pork belly served with baked nuts; Seattle Top Chef finalist Shota Nakajima of Japanese restaurant Taku is making a braised short rib served on Japanese milk bread layered with cheddar cheese and a yuzu-kosho aioli; North Carolina chef Ashley Christensen of Raleigh Southern restaurant Poole’s Diner is offering a cheddar cheese-beef slider with smoked pea chili and smoked tomato slaw; Philadelphia chef Amanda Shulman of prix fixe dinner party-esque restaurant Her Place will serve shrimp, grilled cucumbers, and ranch.

Texas-wise, scope out Dallas’s Misti Norris of offal-ish Petra and the Beast with a pork jowl served with pressed rice and kale pickled with sake; and Houston’s Chris Shepherd of the Underbelly Hospitality group will make a rice ball with Alaskan king crab, tomato conserva, and preserved lemon.

As for Austin folks, focus on the pastry chefs: free agent Laura Sawicki (formerly of New American restaurant Launderette) is whipping up a Jewish feast with bagel chips, schmears, and cookies; and Tavel Bristol-Joseph of Caribbean restaurant Canje will serve up his jerk chicken with a grilled and pickled cabbage.
Where: Franklin Barbecue, 900 East 11th Street, Central East Austin
When: 7 to 10 p.m.
Access: All-access Whole Enchilada passes only.

To honor the famous Franklin line, paying guests will have to wait in line to get into the restaurant

Andy Ricker, the chef of Portland’s essential northern Thai restaurant Pok Pok, is coming to Austin for a pop-up meal at Franklin Barbecue during pitmaster Aaron Franklin’s food and music festival Hot Luck. It takes place on Sunday, May 26 from 5 to 9 p.m. at 900 East 11th Street in Central East Austin.

So the big catch: even though guests will have paid for advance tickets ($85) or already have the festival’s all-access badge (aka the Whole Enchilada pass) which will grant entry, they will still have to wait in line to enter the pop-up. It’s supposed to recreate the experience of waiting on the infamous Franklin Barbecue line. The press release describing the event noted that there is “guaranteed entry” for those with paid tickets, no matter what. This also means that not everyone with that Whole Enchilada pass will get in. There is also supposed to be some availability for walk-ins at the time of the event.

At the event (dubbed Pok Pok-Up), Ricker and Franklin will come up with a menu together, featuring items from both of their respective restaurants. Because the pop-up is also promoting Ricker’s forthcoming third cookbook, Pok Pok Noodles: Recipes From Thailand and Beyond, it’s probably safe to expect some sort of noodle dish, as well as those famous Vietnamese fish sauce wings

Those with paid tickets will get a plate of food and a signed copy of Ricker’s cookbook. Those with Whole Enchilada passes will only receive a plate of food (no book). Attendees will have to pay separately for drinks.

There’s an after-party being held at neighborhood bar Nickel City on 1133 East 11th Street, which will feature a special whiskey menu using Westward Whiskey from Portland’s House Spirits Distillery.

The Milk Bar genius is joining the lineup for Aaron Franklin’s Austin food festival

Pastry genius and Milk Bar founder Christina Tosi is coming back to Austin again. This time, she’s participating in Hot Luck Festival, the food and music festival put together by Austin pitmaster Aaron Franklin et al., taking place over Memorial Day weekend in May.

Tosi will be found at Hot Luck’s brunch event, the Coupe de Grille, where she will serve Milk Bar’s famous cereal milk soft serve from an ice cream truck, alongside an entire toppings bar. That specific affair takes place on Sunday, May 26.

Other participating chefs in the brunch event include Chicago’s Jason Vincent and Ben Lustbader of Giant, Katie Button of Asheville shop Button & Co. bagels, Mason Hereford of New Orleans sandwich shop Turkey and the Wolf, and others.

Individual tickets to the Coupe de Grille are $125. The event is also included in the all-encompassing Whole Enchilada pass, which is $550.

Tosi was all over Austin last month during South by Southwest: she discussed how she grew Milk Bar at a panel and her Milk Bar cookies were everywhere. Again, does this mean Austin will finally get a Milk Bar of its very own?

Israeli chef Alon Shaya, pizza mastermind Chris Bianco, Asheville bagel-maker Katie Button, and sandwich expert Mason Hereford will come to Austin during Memorial Day weekend

Hot Luck Fest, the food and music festival helmed by Aaron Franklin, James Moody, and Mike Thelin, announced the chef lineup for the third iteration happening over Memorial Day weekend from Thursday, May 23 through Sunday, May 26. There are newcomers like New Orleans chef Alon Shaya, Arizona-based pizza expert Chris Bianco, Asheville bagel-maker Katie Button, sandwich expert Mason Hereford of New Orlean’s Turkey and the Wolf, and New York’s chef of Contra and Wildair Jeremiah Stone.

Hot Luck will also feature tons of returning chefs, and plenty of Texas and Portland names (Thelin is the co-founder of the Oregon-based food festival Feast). Scope out the full lists below.

Of Austin note from the lineup, there’s a newcomer: Cuyo, from Ivana and Yamila Maldonado. The Argentinian outfit will fire up empanadas at the festival as part of its debut. The duo is also related to the design director and partner of Guerilla Suit, Luigi Maldonado (which works on Hot Luck).

Chef Gabe Erales will be cooking, though he is no longer working at Dai Due Taqueria. Philip Speer is also on the lineup, presumably previewing bites from his as-of-yet-unnamed downtown restaurant.

This year’s sole new event is the Giddy Up, a welcome party at the Mohawk on Thursday, May 23, with bites from Matheson and Austin’s Callie Speer, Chad Dolezal, and Yoshi Okai with musical performances.

Otherwise, events are pretty much the same as last year: the welcome barbecue party at Franklin Barbecue, the sprawling massive live-fire cookout Al Fuego out in Wild Onion Ranch, the brunch- and car-centric Coupe de Grille. The festival is partnering with the American Lamb Board again this year, where Austin restaurants Cisco’s, Kebabalicious, and Micklethwait Craft Meats will serve up lamb specials during the weekend.

Then there’s the music. The show snacks (aka bites served during specific concerts) haven’t been fully announced, but participating restaurants include Home Slice Pizza, Scholz Garten, and Line Austin Hotel restaurant Dean’s One Trick Pony.

Of note from the bands and musicians are indie rock band Archers of Loaf, Texas singer-songwriter Robert Ellis, Gulf Coast soul band The Suffers, and rock band Sunflower Bean, among others.

For now, only Hot Luck’s all-access tickets, aka the “whole enchilada packages,” are available at $550 which includes exclusive access to the Giddy Up and early entry to other events. A la carte event and concert tickets will be available later. Partial proceeds will be given to the Safe Alliance. Tickets will go on sale starting tomorrow, Monday, March 4 at 10 a.m.

Multiple people agreed that the brunch-centric Coupe de Grill event on Sunday had the best food of the weekend.

Since the event took place at the Austin Speed Shop, which meant attendees were surrounded by classic cars. Franklin even brought along and posed with his vintage Ford truck, which is getting its engine rebuilt at the shop.

Portland chef Peter Cho got hurt during a golf cart accident during Al Fuego, so he wasn’t able to cook at the brunch event on Sunday. Mixtli chefs Rico Torres and Diego Galicia paid tribute to him with their Peter Cho-laquiles, made with Korean-braised short ribs. The sign noted the hashtags #WheresPeter and #Ouch.

Emmer & Rye’s Kevin Fink made killer migas tacos, but when he ran out of tortillas, he pivoted to migas nachos.

The food festival is back this week

Hot Luck Festival, the food and music festival from Aaron Franklin, James Moody, and Mike Thelin, returns this week. Events include the fire-focused sprawling Al Fuego cookout, the backyard barbecue at Franklin, and a mall food court-inspired sip and stroll at the Fair Market, happening during Memorial Day weekend from Thursday, May 24 through Sunday, May 27.

Eater recently sat down with Franklin and Moody to discuss what they learned from last year’s inaugural festival and what to expect in 2018. Look out for Eater’s complete guide to tackling the festival sometime tomorrow.

Pulling off the first-time festival last year was a feat but it worked out well, despite the fact that the team only really started planning five months before it took place in mid-May.

“We were willing to kill it after the first year,” Moody revealed, in case the food and music festival didn’t turn out as planned. Thankfully, everything went smoothly.

“‘Holy shit, we pulled it off,’” Moody, who comes from a background of running festivals (like Fun Fun Fun Fest, RIP) remembered thinking, “and then it was, ‘Oh shit, we could have done this and that better.’” He and Franklin immediately started planning as soon as it ended.

The aim for Hot Luck is accessibility and approachability for everyone, not just those who happen to be obsessed with food or music. It’s a wholly special festival, marrying what they refer to as the high and low together, offering a “nice bit of contrast,” as Franklin explained. It’s different than, say, seemingly cookie-cutter food festivals. And that’s very intentional.

“We know that a lot of those exist,” Moody said, referring to the usual food and wine festivals throughout the country and world, “and there’s a lot of space for that. But what was happening is that there are all these people who want to get involved in food, and felt like it wasn’t for them.” Hot Luck is their answer.

Nadia Chaudhury/EATX

Contigo’s setup at Hot Luck last year at Al Fuego

“[Franklin] always tells the chefs to leave their chef coats at home,” Moody continued. “Just do your thing, you’re cooking for your friends. So you have a Michelin-starred chef that’s going to do grilled cheese. Cool.”

That sentiment is best embodied by Hot Luck’s new event, the Cisco’s Takeover, a late-night party at the classic greasy spoon, with Empellon chef Alex Stupak and author of La Tacopedia Alejandro Escalante (Franklin called him the “godfather of tacos”). The location is intentional.

It’s about “celebrating what’s cool about Austin, which is quickly going away,” Franklin said. “I think it’s cool to just be able to focus on what little we have left of that.”

“We put a tremendous amount of firepower on our smallest event,” he continued, “which most festivals would’ve put huge names at big night fire event or whatever.” Instead, they opted for the small Tex-Mex restaurant.

Hot Luck also hosts a Night Court, where the theme is mall food courts from the 1980s. “I tell everybody they don’t have to do anything fancy,” Franklin said. “Take the stress off of coming up with something amazing or blow people’s minds, and have fun with it: ‘What do I like to eat?’” It’s about trusting the chefs and letting them do what they do well. (Even though chef David Chang was initially attached to cook at this event, he was unable to make it. In his stead is Momofuku chef Matt Rudofker.)

“It’s also the ultimate high-low,” Moody explained. “To have great chefs do the lowest of the low foods.”

Another unique event, and new to Hot Luck, is the Sunday brunch-themed Coupe de Grille, which takes place in an actual automotive car shop. “It’s the brunch version of chicken shit bingo,” Franklin said, referring to the beloved pastime. “Hot rods are being chopped, while onions are being chopped,” Moody further elaborated.

As for the music, Moody made sure there was more variety, including DJ Questlove’s dance party, post-hardcore band Hot Snakes (Franklin is particularly excited about this show), country-funk band the Texas Gentlemen, Danish punks Iceage, and indie rock band Girlpool. And because it’s a food festival, chefs will cook up special snacks for each show.

As is the Franklin way, the pitmaster wants to continue building and creating things for the festival until it’s entirely self-sufficient. He’s expanding Hot Luck’s smoker reserve, and also working on curved banquette tables. Next year, he’s thinking about making actual tents for the events.

Hot Luck will always evolve: events that are happening this year might not take place next year, or maybe they will. It’s all about keeping the food festival fun and lose. While the all-access Whole Enchilada passes are sold out, along with the welcome party at Frank and the Cisco’s Takeover, there are still tickets to Al Fuego, Night Court, Coupe de Grille, and many of the concerts.

David Chang isn’t coming to Austin for Aaron Franklin’s food party

Since a major focus of Hot Luck Festival, the food extravaganza from Aaron Franklin that is taking place over Memorial Day weekend, is the merging of music and food, it released the lineup for its show snacks. Each concert features a different chef who will create a special bite.

For 2018, this includes DJ Questlove with chef Kristen Kish (Top Chef winner and chef of upcoming Line ATX Hotel restaurant Arlo Grey), Hot Snakes with Olympia Provisions’ Elias Cairo, and Twin Peaks with food truck Kebabalicious’ lamb bites.

Instead, he’s sending Momofuku chef Matt Rudofker in his place.

Another new Hot Luck event includes the kick-off feast grouping Franklin with Toronto chef Matty Matheson and Austin chef Andrew Wiseheart at the latter’s restaurant Contigo. They’ll serve up brisket and other like-foods on Wednesday, May 23. This is a separately ticketed event from Hot Luck, running at $85 per person. (The Austin event is actually part of Matheson’s dinner series, which will also take place in New York and San Francisco.)

Other participating chefs include Ashley Christensen, Alex Stupak, Renee Erickson, Sam Jones, and a whole lot of Austin chefs. Other events include the mall food court sip-and-stroll Night Court, Mexican feast at Cisco’s, the Giddy-Up afterparty, the returning fire-focused Al Fuego, and the brunch party Coupe de Grille (where Franklin will cook as well).

Hot Luck Festival runs from Thursday, May 24 through Sunday, May 27.
