Olive & June's Justin Rupp on His Favorite Nightcaps

Olive & June's new Executive Chef Justin Rupp is a veteran of the Austin restaurant scene. Shawn Cirkiel's protégé previously served as chef de cuisine at downtown's parkside, and helped to open neopolitan pizza joint the backspace. He's now moved on to the executive chef position at sister restaurant Olive & June, where he is focusing on Italian flavors and seasonal ingredients.

Eater spoke with Rupp about the most important meal of a chef's day: the nightcap. "I need to unwind a bit after service," he says. "I have problems just sitting down and relaxing - I need to give it time." His late night picks include donuts from the all-night Mrs. Johnson's Bakery, craft beers at The Draught House, and PBR with a shot of Wild Turkey at Barfly's, where the bartenders are friendly and "they really crank the AC."

Justin's order: the seafood pancake and pork bone soupHis take: "This is a great place to go with the cooks, and sometimes with my girlfriend. They stay open until at least two, sometimes even later if you ask. The pork bone soup comes with chunks of pork still on the bone, set on a table-top burner. My girlfriend works early, so I have to talk her into meeting me here sometimes, but we love it."
