Discada refers to the northern Mexican style of cooking meat and vegetables using a kind of “cowboy wok.” Meat and vegetables are layered in and cooked in the juice from the previous layer. This taco truck serves only this type of taco, alongside elotes. The tiny tacos are served simply with salsa and lime.
