The still-popular Hawaiian fish dish poke is still going strong in Austin. Traditionally, poke features raw ahi tuna, soy sauce, sesame oil, sesame seeds, and onions as the usual suspects. Then there are the fusion formats, from burritos to nachos to poke atop fried tofu skins.

However, the payoff can be big for those willing to take a risk and build their own bowls at many fast-casual spots like Poke House, Pokeatery, and Poke Austin.
