Kolaches are an iconic foodstuff in Texas, particularly Central Texas. There are many places to grab this historical Czech pastry around town, where it is either the main attraction or savory supplements to a menu full of donuts and other treats. While the word kolache usually indicates sweet, fruit-filled pastries, for the purposes of this guide, it is being used interchangeably with klobasnek, which is the Texas-bred variant containing sausage and other meats.

In Austin, this means classic takes from Moonlight Bakery, barbecue-stuffed ones from Kerlin BBQ, vegan versions from Capital City Bakery, sweet and savory takes from Batch Craft Beer, and more. This update adds Little Brother, Austin Kolache & Koffee, and Saddle Up to the mix.
