Austin is meat-obsessed, so it makes sense that its charcuterie options are the very best. This means slices of salumi, coppa, sausages, spreadables like pate and chunky rillettes, meaty headcheese (dairy not involved), and other types of delicious, cold, cured meats. Dress ‘em with various accoutrements: jams, honey, mustard seeds, pickles, and of course, a good board is not complete with bread. It doesn’t hurt that it all pairs very well with wine.
