Lauded Buda food truck Tejas Birria is opening a pop-up location in Austin this summer with a menu full of birria de res. The temporary space will operate out of commissary kitchen Wingman Kitchens at 1023 Springdale Road, Building 1 in the East MLK neighborhood as of June 15.
The Austin menu will feature its birria de res — essentially stewed beef — in many forms: tacos, flautas, quesadillas, Texas toast melts, birriamen, and the lauded quesabirria tacos with cheese. For dessert, there’s flan from Austin company Algo Dulce.
Tejas’s shared kitchen space includes indoor and outdoor dine-in areas for people who want to dine on site. There is a dedicated counter inside of the shared kitchen space for in-person ordering, but people can also place orders online.
The menu will be available every Tuesday for the next three months from noon to 8 p.m. or until everything is sold out each week. Its last day will be on August 31.
This pop-up is a way for the Hernandezes to test out the Austin waters. People have asked them to open in Austin since they opened in December 2020. “We know that ghost kitchens are becoming quite popular,” Alex Hernandez writes to Eater, “as well as another means for businesses to get their brand and feet wet in an unfamiliar area and set up that’s not their norm.”
The Buda food truck will remain open during this pop-up.
