El Paso’s vegan Mexican street food restaurant Lick it Up is heading to Austin, with the chef of popular local vegan Mexican truck, Cool Beans, at the helm. Lick it Up will open starting on Friday, August 21, found at Spider House Cafe and Ballroom on 2908 Fruth Street in West Campus.
Lick It Up chef Edgar Delfin serves his version of vegan comfort food. That means carne asada fries (with seitan steak and vegan queso), flautas, tacos (seitan steak, adobada, seitan milanesa, or mushroom chorizo), tortas, and burgers with Beyond Meat patties. The restaurant is particularly known for the milanesa torta.
The Ciudad Juárez, Mexico native is a punk-rock-singer-turned chef who earned his chops at El Paso restaurant Eloise, which is owned by Jim Ward, the co-founding member of hardcore band At the Drive-In. Delfin opened Lick it Up in as a food truck at a dive bar in 2017. After garnering acclaim and a feature on Guy Fieri’s Diners, Drive-ins, and Dives, Lick it Up opened a restaurant location within another El Paso bar.
This truck will be the first location outside of El Paso — as a musician, Delfin was drawn to Austin — and Delfin has plans to open a restaurant in Austin as well.
Rolando Garza of Cool Beans will operate the Austin location of Lick it Up. The truck will take over Cool Beans’s space at Spider House. This also means that Cool Bean’s truck, which had been closed since late 2019, will remain so, but but Garza will still offer catering and special events services under the name.
Lick it Up will be open daily from 12 p.m. to 8 p.m. To follow COVID-19 safety guidelines, Lick it Up will only accept online orders and will be cashless. The truck will also offer delivery through Favor. Spider House’s patio is open for dine-in service, too.
