The owners of East Riverside Vietnamese restaurant Pho Please, Anh Nguyen and Tien Do, are opening an entirely new restaurant this week. Sip Pho, which took over what had been longtime barbecue restaurant Ruby’s BBQ space on 512 West 29th Street, will open this week on Friday, February 21 in the North Campus area.

Sip Pho’s menu is mostly similar to the one available at Pho Please. This presumably means pho, banh mi, vermicelli, and rice bowls. What will be different is the “chef’s choice” section, which will feature newer dishes like pho wagyu. Nguyen is working at Sip’s head chef.
Sip’s new building, which is designed by architecture firm Magic, features a vaulted ceiling, communal tables, Douglas Fir wood details, and a patio. Ruby’s structure had to be knocked down to construct Sip Pho, because it was it was in “too poor condition to be salvaged,” according to the release.
Before Nguyen and Do opened Pho Please in 2016, Do worked for Austin fast-casual Vietnamese chain PhoNatic.
Ruby’s owner Pat Mares closed the barbecue restaurant after 30 years of service in February 2018, because it was difficult to keep the business going.
