Thai Fresh chef and owner Jam Sanitchat has launched a Kickstarter campaign to fund her cookbook. The campaign has a goal of $60,000 to reach before Saturday, November 9.

Sanitchat, who is from Bangkok, has been teaching Thai cooking for over 16 years, including classes at the commercial kitchen of the restaurant. The book will include 75 recipes like pad prik king (a spicy curry), khao man gai (chicken and rice), and grilled pork, as well as coconut milk-based ice cream flavors (think: mango lime, banana pecan). Each recipe is accompanied by a personal anecdote about the dish, and a recommendation for a wine pairing from Rae Wilson of Wine for the People. It will be shot by renowned photographer Jody Horton.

Sanitchat is also planning a dinner party to raise money for the book, although dates for that have not been announced yet. She hopes to have the book published by October 2020.

Santichat opened Thai Fresh on South First with her husband Bruce Barnes in August 2008. She opened vegan ice cream food truck Gati ice cream in 2018, in advance of a shop in Holly. It’s been experiencing delays in opening, but should debut sometime this month.
