Provision is the new restaurant taking over comfort food spot Red’s Porch’s shuttered location in the Quarry at 4200 West Braker Lane, Suite B. The table-service restaurant with sports bar vibes is now open as of Wednesday, October 30.
Co-owners chef Albert Gonzalez and Poeta Asher are looking to serve what they define as “approachable food” with a wide-ranging menu at their restaurant. This means items like beer-brined, twice-fried lollipop chicken wings served with buffalo sauce and blue cheese; farro bowls with braised beef, vegetables, kimchi, and a six-minute egg; and short rib quesadillas made with Oaxaca cheese. There are also family-style dishes.
As for drinks, there’s beer, cocktails, wine, and cocktails, with an emphasis on low-proof and non-alcoholic options.
The space features a dining room, bars inside and out, a covered patio, and plentiful television screens, as well as a big projection screen. Provision’s hours are from 11 a.m. to 10 p.m. Sunday through Thursday, and then from 11 a.m. to 11 p.m. Friday and Saturday.
Gonzalez had been the director of culinary for both Red’s Porch and North by Northwest Brewing Co. (which are owned by founder Davis Tucker). Before that, he was the executive chef of upscale Mexican restaurant Grizzelda’s, executive chef of Jacoby’s, and Apothecary Wine Bar when that was still open. Before Austin, he worked in various Chicago restaurants, like Spiaggia, Topolobampo, essential barbecue restaurant Chicago Q, among others.
Asher, who is Provision’s events coordinator and director of training, worked as a trainer at Trudy’s and the like at several Chicago restaurants like Veeraway. Most recently, she was the events coordinator for Banger’s in Austin.
Tucker opened Red’s Porch on South Lamar in 2009, and followed that with the Quarry and Round Rock locations in 2017 and 2018. The satellite locations both closed this summer. Tucker also closed the second location of North by Northwest Brewing Co. on Slaughter Lane earlier this year (the original one is still open).
