Nixta Taqueria, the highly anticipated East Austin taco restaurant, finally sets its opening date. The 2512 East 12th Street restaurant from co-owners chef Edgar Rico and Sara Mardanbigi will open on Saturday, October 5 in the Chestnut neighborhood.
As indicated by its name (a reference to nixtamalization, a method of processing corn), the casual counter-service restaurant will focus on making and serving corn tortillas. The tacos and tostadas will feature two or three main fillings and toppings, plus rotating specials. Expect the enchiladas potosinas, which consists of duck-fat refried black beans, a puree made up of potatoes and chorizo, plus shredded cabbage, queso anejo, and roasted tomato salsa, as well as vegetarian options.
As for sweets, Nixta will serve up a small batch of paletas (coconut, watermelon) and aguas frescas (horchata, lime, prickly pear)
Rico worked in various acclaimed Los Angeles restaurants like Son of a Gun, Trois Mec, and Sqirl, as well as staged at Pujol in Mexico City. In Austin, he was the chef de cuisine at Peached Tortilla’s event space Peached Social House. That’s where he met Mardanbigi, who is overseeing Nixta’s operations.
Currently, the restaurant is hiring for staff positions, including cooks, prep cooks, and cashiers.
