Canada-based sushi chain Ginger Sushi + Poke Shop is coming soon to the Belterra Village development in Dripping Springs. The restaurant at 164 Belterra Village Way, Suite Y600 is now open as of Monday, July 29.

Ginger Sushi + Poke Shop has a wide-ranging menu that includes traditional preparations of sashimi and poke as well as culinary creations that might fly too close to the sun, like sushi burgers, sushi burritos, sushi tacos served in a crispy wonton shell, and what can be very loosely considered sushi pizza (ingredients on top of a crispy rice and mozzarella crust). The restaurant offers dine-in and grab-and-go options.

The franchise first opened in Montreal in 2000 and currently operates over 150 locations in Canada, where it is known as Sushi Shop. It has opened a few stores in the U.S., starting with a Florida location in 2018 (that has since closed), and locations in Las Vegas and San Marcos. The franchise has plans to expand to 10 locations in the U.S. in six years. It’s affiliated with Kahala Brands, which also owns Cold Stone Creamery and Pinkberry.

Ginger Sushi joins the growing Belterra Development in Dripping Springs, which also includes barbecue spot The Switch, the new location of pizzeria Pieous, a Torchy’s Tacos, and more.
