Taco Truck Vaquero Taquero Is Opening its First Restaurant

The new restaurant will bring the trailer’s famous al pastor tacos to North Campus

Hyde Park taco trailer Vaquero Taquero is finally opening that new restaurant at 104 East 31st Street on Saturday, June 1 in the north campus area.

Expect a similar menu to the food truck’s, with al pastor, carne asada, and nopales, as well as quesadillas and breakfast tacos like machaca/eggs, etc., all made from its trompo and grill, served on handmade tortillas.

Co-owner Daniel Cobos previously told Eater that the restaurant would expand with more offerings too, like different tacos such as carnitas, plus adding an entire raspas bar.

Co-owners and brothers Daniel and Miguel Cobos grew up in the Rio Grande Valley and Monterrey, Mexico. They first opened as a push cart in downtown Austin in front of the Mexic-Arte Museum in 2016. It evolved with the Hyde Park food truck in 2017. That will remain open when the new restaurant debuts.
