Always-busy Austin pitmaster Aaron Franklin revealed some updates for that forthcoming breakfast taco and coffee trailer he’s opening outside of Franklin Barbecue at 900 East 11th Street in Central East Austin.
First, it’s going to open in several weeks, as Franklin talked about on Texas Monthly podcast National Podcast of Texas today. Presumably, it will debut sometime after his food and music festival Hot Luck takes place over Memorial Day weekend, which means probably June.
Expect expertly crafted coffee, since the man loves his espresso. As for food, there will be breakfast tacos, which will incorporate Franklin Barbecue’s brisket, naturally, as well as house-made salsas.
“Let’s be a little creative,” Franklin said of the coffee/taco venture to Texas Monthly. It offers “fun ways to make pretty rad breakfast tacos.” He was already humble about the possibility of a second line just for the trailer.
