Downtown Austin Hotel Adds Bourbon-Obsessed Bar

Hilton Austin’s downtown hotel restaurant Cannon + Belle has revamped its bar to become Bourbon Bar, featuring over 60 whiskeys from around the world. It’s now open now at 500 East 4th Street.

The new bar marks both an addition and transformation for the hotel’s restaurant, taking over additional space from the previous bar. The menu features predominantly Kentucky bourbons, like the Old Rip Van Winkle Collection, although rye whiskeys like Whistle Pig ad other American bourbons like Garrison Brothers are also available as well as offerings from Japan.

Whiskeys are served in one- or two-ounce pours or as part of cocktails. There are also flights, called “whiskey trails,” of Kentucky bourbon, rye whiskey, Japanese whiskey, and American bourbon.

The bar decided to focus on bourbon because the spirit has a defined categorization (minimum 51% corn) and all varieties start from a similar recipe. The bar still offers a full selection of liquor.

Bourbon Bar is open Tuesday through Saturday from 5 to 11 p.m. Self-parking at the hotel is free with validation.
