Downtown Austin hotel the Line’s next spot, the casual burger restaurant and bar now called Dean’s One Trick Pony, is set to open sometime in October at 111 East Cesar Chavez, on the corner on Congress Avenue.
While details are still pretty scarce about the restaurant, it will serve up burgers (look out for the Dean’s Double Burger) and bar foods stemming from around the world like krab rangoon and Michelada-style Mexican shrimp cocktails. For sweets, there will be soft serve ice cream and pies.
Drinks-wise, there will be a tequila and watermelon cocktail (the All-Time High), a take on rum punch (Captain Fantastic), and a frozen Aperol pink lemonade, along with other cocktails frozen and not, and beers.
Dean’s was originally going to be called Bridge & Trail, but the name was nixed. Overseeing the restaurant are the hotel’s executive chef Justin Ermini, the pastry chef Ashley Whitmore, and beverage director Brian Floyd.
The name comes from a newspaper headline about Don Dean, who managed the Crest Inn’s nightclub Club Seville in the 1960s. The Crest Inn eventually became the Radisson Hotel and then the Line Hotel.
The Line Hotel opened with its flagship restaurant, Arlo Grey, from Top Chef winner Kristen Kish and Los Angeles-based coffee shop Alfred in June. The hotel’s third and final restaurant, rooftop spot P6 is opening sometime next year. Originally, Austin chef Damien Brockway was going to helm the restaurant, but he left. At the moment, there is no attached chef for P6.
