The former head brewer for Austin’s sour brewery Blue Owl has opened his own place out in San Marcos. Roughhouse Brewing, which will be found at 612 Oakwood Loop, produce farmhouse-style beers. The five-acre property will also include a restaurant, S Baker Kitchen, all of which opened in January 2019.
The brewery is helmed by husband-and-wife team Davy and Alex Pasternak, both native Texans. During Davy’s time at Blue Owl Brewery, he experimented with yeast and oak fermentation. He plans on using those ingredients for Roughhouse, which will make the beers drier. The couple plan to open with four or five beers, and serve local wine and cider as well.
Roughhouse has partnered with S Baker Kitchen to serve a small menu. The chef is Steve Baker DeLeon, who named the restaurant after his grandfather, who was known as a legendary family cook. Expect dishes like chips with smoky-sweet salsa, crispy pork belly bites, larger plates like smoked meats and vegetables, bread made with the beer, and pies and cookies for dessert.

The brewery itself is modeled after a wine estate, and takes up part of the Pasternak’s 50-acre ranch (the couple hope to build a home there someday). There is a taproom, with beers for tasting and for to-go sales, a covered patio, and large outdoor seating space. Each beer’s story is illustrated by former Austinite Graham Francoise. The beer will also be released for limited distribution.
Roughhouse is open Thursday and Friday from 4 to 9 p.m., Saturday from noon to 9 p.m., and Sunday from noon to 7 p.m.
