Eden East Chef Is Now Running Springdale Farm

Sonya Cote is taking over the farm for the next two years

Springdale Farm isn’t going away for now, thanks to Eden East’s Sonya Cote. The chef, who operates her restaurant Eden East right on the farm property at 755 Springdale Road, is taking over the farm, according to Austin 360.

While Springdale Farm’s last day under founding co-owners Glenn and Paula Foore was on Saturday, June 30, Cote will reopen the farm on Saturday, July 7.

She and partner David Barrow (co-founder of Homegrown Revival) signed a two-year lease for the farm from new owners PSW Real Estate. The company will redevelop the land sometime after that.

To prep for the farm, Cote is making some changes to Eden East, like offering an a la carte menu on Thursdays. Eden East already serves breakfast on Wednesdays and Saturdays.

The Foores turned their property into a proper farm in 2009. Cote opened Eden East as a literal farm-to-table restaurant in 2013. She also owns Hillside Farmacy and Clifton, Texas restaurant Sinclair.
