James Beard Award-winning pitmaster Aaron Franklin is turning his attention to steaks for his second cookbook. Simply titled Franklin Steak (which is most likely a working tile), the sophomore book will be co-written with food and wine writer Jordan Mackay, who worked on Franklin’s first book too. It’s set to publish on March 5, 2019 through Ten Speed Press, and it’s already available for preorder on Amazon.
Franklin’s steak cookbook will be all about the science behind the “perfect steak. The book will cover everything from buying meat, different breeds of cattle to how to create your own grilling setup (naturally). Franklin and Mackay will also look into how other regions cook steaks, like California, Spain, Scotland, and Japan, according to the Amazon blurb.
Franklin’s first book, Franklin Barbecue: A Meat-Smoking Manifesto, focused on making barbecue approachable to everyone (much like his PBS show BBQ With Franklin). The book was published in April 2015, and became a New York Times best-seller, as well as received Eater’s cookbook of the year can later that year.
Franklin Barbecue is currently on its annual summer break today, Monday, July 30 through Thursday, August 9.
