PJ Edwards, the culinary director for essential Texas restaurant Contigo and its parent group Edgewise, is opening his own restaurant out in San Antonio, along with his wife Lindsey Edwards, who was the general manager for the Jason Dady Restaurant Group. Meadow Neighborhood Eatery and Bar is taking over the space vacated by Dady’s New American restaurant Tre Enoteca on 555 West Bitters Road.
The neighborhood restaurant’s menu will feature Texas dishes while drawing on Southern influences. Expect pickled items, burgers, fried chicken, charcoal-grilled ribeyes, and peach calzones. There will be a dedicated children’s menu, as well as Sunday brunch. The beverage menu will span beer, wine, and cocktails.
Edwards will preview the restaurant’s menu with various pop-ups. The first takes place at Cullum’s Attagirl on Monday, July 23 and Monday, August 6.
Before becoming Contigo’s culinary director last summer, he was the chef de cuisine for the group’s now-closed East 6th restaurant Chicon and the opening sous chef/turned chef de cuisine of its previous iteration Gardner. He also spent some time at Sean Brock’s McCrady’s in Charleston and Jason Dady’s Bin 555.
While the Meadow release noted that Edwards is Edgewise’s former culinary director, a rep from Edgewise said that he’s still the culinary director.
Meadow is set to open in September 2018. When it does open, its hours will be from 5 to 10 p.m. Tuesday through Saturday, and Sunday brunch from 10 a.m. to 2 p.m.
