‘Top Chef’ Kristen Kish’s Austin Restaurant Is Now Open

The Line Hotel in downtown Austin’s new restaurant boasts of burgers and ricotta beignets

Arlo Grey, the Line Austin Hotel restaurant from Top Chef winner Kristen Kish, is now open in downtown Austin. It is initially only open for dinner daily at 111 East Cesar Chavez Street.

Arlo boasts of a “fucking good” burger, according to Kish, which is made of Texas beef, topped with aerated pommes aligot, lacto-fermented pickles, Kewpie mayo, caramelized onions, and mustard greens, on a challah bun.

Other dishes pull from Kish’s culinary background, from the crispy chicken with rice porridge and black truffles or the airy ricotta beignets served in creme fraiche with caviar.

Kish admitted to Eater that she was “terrified” of opening a large hotel restaurant. “Something about it was the appropriate challenge,” she said. “And I was appropriately scared.” But she was up for it. “‘Fuck it, let’s do it. It’s time,’” she continued. Scope out the full menus below.

The bar, which was overseen by the hotel’s beverage director Brian Floyd, features takes on classic cocktails like the Line Old Fashioned with a beautiful ice cube and the already-popular breezy Devil’s Backbone. There are wines by the glass, beers, and coffee too.

Dinner at Arlo Grey is available from 5 to 10 p.m. daily. The bar is open from 3 to 11 p.m. Sunday through Thursday, and then from 11 a.m. to midnight Friday through Saturday. Daytime menus will be added at a later date.

The rest of the Line Hotel Austin’s restaurant lineup includes P6, the rooftop spot from Austin chef Damien Brockway, and burger and beer spot Bridge & Trail from the hotel’s executive chef Justin Ermini. Those are slated to open later this year.

The Line took over the Radisson Hotel for its first Austin location. There are Line Hotels in Los Angeles and Washington, D.C. as well.
