The Switch, Stiles Switch BBQ & Brew’s new restaurant, is now open. The Brentwood restaurant’s expansion to the Belterra Village development in Dripping Springs marks a slightly more upscale move for the neighborhood barbecue restaurant.
While still staying true to the barbecue aesthetic with some wooden tables and Texan accents, The Switch has expanded to offer a full bar and seated dinner service (lunch is still counter service). Dinner also goes beyond just barbecue while still making use of the smoker with entrees like gumbo, a smoked and fried beef rib with cheddar cheese grits, and blackened catfish with smoked shrimp.
Desserts come from chef Callie Speer of punk rock diner Holy Roller, who uses Stiles Switch barbecue in some of her dishes. This means a healthy dose of nostalgia, with ice cream sandwiches, a banana split, and a Big Red Firecracker Float. There will also be Sunday brunch, complete with gumbo gravy and Bloody Marys.

The Switch joins several restaurants at the Belterra development in Dripping Springs, like The League Kitchen + Tavern and Torchy’s Tacos. The original location of Stiles Switch opened in 2011.
