Brentwood barbecue restaurant Stiles Switch BBQ & Brew is opening its eagerly awaited Dripping Springs restaurant The Switch on Friday, June 22. The restaurant, found at Belterra Village on 166 Hargraves Drive, will focus on smoked meats (of course) as well as Cajun dishes.
For lunch, The Switch’s counter-service menu includes smoked meats, sides, and Cajun sandwiches and salads. Look out for the po’ boys made with pulled pork, crispy fried shrimp, jalapeno mayonnaise, and brisket debris gravy.
Dinner (which is table-service), will feature entrees like gumbo, the smoked and fried beef rib with cheddar cheese grits, and blackened catfish with smoked shrimp.
All desserts were concocted in collaboration with Holy Roller’s Callie Speer (her downtown restaurants features brisket from Stiles). This includes banana splits, ice cream sandwiches, and the Big Red Firecracker Float.
Sunday brunch will feature eggs Benedict with gumbo gravy, among other dishes. Bar snacks include popcorn Gulf shrimp, seven-layer dip, and pigs in a blanket.
The full bar will mix up margaritas, Bloody Marys (with smoked and pickled garnishes), and beers.
Owner Shane Stiles’ large team includes head chef Barclay Stratton, lead pitmasters Christopher McGhee and Bull Dumas, pitmasters Marco Oglesby and Troy Warlick. Then there’s partner Todd Duplechan (chef and co-owner of South First prix fixe restaurant Lenoir), director of operations Tony Pollock, and Stiles Switch pitmaster Lance Kirkpatrick who will manage both pit rooms.
The Switch will be open from 11 a.m. to 9:30 p.m. Tuesday through Thursday, 11 a.m. to 10:30 p.m. Friday and Saturday, and from 10 a.m. to 9:30 p.m. Sunday. Dinner begins at 4 p.m. and Sunday brunch is served from 10 a.m. to 4 p.m.
