Cherrywood Biscuit Sandwich Shop Sets Its Opening Date

Bird Bird Biscuit will sling bacon/egg/cheeses and fried eggplants with mozzarella on house-made biscuits

One of Austin’s most anticipated summer restaurants, Bird Bird Biscuit, the fast-casual daytime biscuit sandwich shop, is opening on Thursday, June 28. The 2701 Manor Road shop is courtesy of co-owner Ryan McElroy (who also owns Thunderbird Coffee) and co-owner/chef Brian Batch.

The sandwich menu is simple. The breakfast and lunchtime fillings range from the classic the bacon/egg/cheese with crispy bacon, cheddar cheese, and bacon-infused chipotle mayonnaise; the vegetarian-friendly fried eggplant layered with fresh mozzarella and garlic tomato jam; fried chicken thighs with cayenne-black pepper honey and bacon-infused chipotle mayonnaise; to the nostalgic sweet peanut butter, melted chocolate, banana slices, and honey.

Other items include dessert-ready doughnut holes made out of biscuit dough, as well as simple biscuits with jam and biscuits with gravy, hash browns, and pickles. For drinks, there are Wild Gift coffee (naturally), orange juice, Mill-King milk, and Maine Root sodas.

Bird Bird has been previewing its dishes with various pop-ups in Austin. Batch took his inspiration from Nashville’s biscuit sandwiches and Los Angeles’ sandwich shops.

Bird Bird’s hours are from 7 a.m. to 3 p.m. Tuesday through Friday, and from 8 a.m. to 4 p.m. Saturday and Sunday.
