South Texas-Style Taco Trailer Vaquero Taquero Is Opening Its First Restaurant

Tacos al pastor, breakfast, and nopales are headed to North Campus

Vaquero Taquero, the Hyde Park taco trailer, is opening a restaurant in North Campus. Co-owners and brothers Daniel and Miguel Cobos will serve the same favorite tacos — al pastor, nopales, machaca and eggs, and more — in handmade tortillas from the upcoming 104 East 31st Street. The goal is to open in June.

When it opens, the Vaquero Taquero restaurant will only offer takeout at first, as Daniel Cobos told Eater. The menu might expand slightly to include fillings like carnitas. There will be a raspas bar too. The Hyde Park truck will remain open as well.

In order to open the restaurant soon, the brothers are currently raising money through fundraising site Kiva. They’re asking for $10,000 to work on a gas line and fume exhaust for the new restaurant.

The Cobos brothers, who grew up in the Rio Grande Valley, began Vaquero as a breakfast taco cart in downtown Austin, which opened in 2016. (The cart is currently temporarily closed.) Then they expanded into the fuller food truck on 43rd and Duval streets in 2017. That space features a prominently displayed trompo, as well as a separate trailer housing the asador.

The 31st Street building used to be home to Go Go Gourmet, which closed at the end of April.
