Chef Adam Brick’s Neapolitan Pizza Pop-Up Preview Is Back On

After a false start earlier this April, chef/owner Adam Brick is now hosting that delayed pop-up preview of his forthcoming restaurant Marinas tonight. It will take place at Cane Rosso today, Monday, April 23 from 6 to 9 p.m. in Sunset Valley at 4715 South Lamar Boulevard.

The menu will featured three pies, including a carbonara one. Marinas’ pie dough will be made using flour from Barton Springs Mill, specifically a natural sourdough starter and four heritage wheat varieties.

The pop-up will include several other dishes, like bread paired with seaweed butter, pasta with shrimp, pork belly sausage, and Calabrian chilis. For vegetables, there are confit sunchokes and smoked tuna or spiced cauliflower with cashew yogurt. Dessert consists of a pistachio custard parked with strawberries and meringue. Originally, this pop-up dinner was supposed to happen on April 9, but that was canceled. While there is still no announced location for Marinas, it will serve up wood-fired dishes, Cuban sandwiches, pastas, pizzas, and coffee. The all-day restaurant is named after Brick’s grandmother.

Before venturing into the solo restaurant, Brick was the founding chef de cuisine of Spicewood restaurant Apis, but left last fall to take over Hyde Park wine restaurant Vino Vino. He left that restaurant quickly a month later.
