Vietnamese food truck Saigon Le Vendeur opened its first brick and mortar restaurant up in North Shoal Creek on 9070 Research Boulevard. Called Le Bleu, the restaurant has been testing out the space since March.
Le Bleu’s menu is similar to Saigon’s food truck menu. There is various banh mi and rice vermicelli noodle bowls with proteins from shaken steak to lemongrass chicken to tofu, chicken wings, egg rolls, matcha creme brulee, and more. A menu dedicated to grilled skewers will be added at a later date, as well as beers. Look out for pho and curry ramen specials too.
Saigon chef/owner Tebi Nguyen had been wanting to open a brick and mortar restaurant for Le Saigon for some time. It makes sense that he settled on the Research Boulevard address; it used to be home to Vietnamese sandwich shop Dang Banh Mi (which was replaced by now-shuttered Asian-Southern fast-casual restaurant Dang Kitchen). Le Bleu’s kitchen also serves as the prep kitchen for Saigon.
Le Bleu’s hours are from 11 a.m. to 9 p.m. Monday through Saturday, and then from 11 a.m. to 4 p.m. on Sunday.
