Vietnamese food truck Saigon Le Vendeur is opening a new brick-and-mortar restaurant in North Shoal Creek on 9070 Research Boulevard. Le Bleu will serve the food truck’s beloved banh mi and vermicelli bowls, along with newer dishes.
Le Bleu’s expanded menu will include grilled meat skewers, goi (Vietnamese salads), rice dishes, noodle soups like pho and curry ramen, and more. For drinks, along with Vietnamese coffee, there will be beer.
Saigon chef/owner Tebi Nguyen is looking to open Le Bleu open sometime in mid-March or early April.
Saigon’s East 7th Street food truck, which debuted in July 2013, isn’t going away either. The restaurant will serve as a prep kitchen for the trailer and catering gigs.
The choice of address makes sense for Saigon’s culinary needs. The Research Boulevard space used to be Asian-Southern fast-casual restaurant Dang Kitchen, which seemed to have closed sometime last fall. Before that, it was Vietnamese sandwich shop Dang Banh Mi from Plucker’s Wing Bar’s Dave Paul, Sean Greenberg, and Mark Greenberg, which had opened in July 2014.
