ThoroughBread opened today, Tuesday, November 6, at 1709 Bluebonnet Lane. The Zilker neighborhood bakery serves loaves of bread, cookies, and pastries ranging from savory to sweet.
ThoroughBread’s full bread lineup includes sourdoughs like white, whole wheat, rye, and olive), and regular ones (white, whole wheat, cinnamon raisin, and gluten-free).
Baker Ryan Goebel wanted to open his own small-batch bakery, focusing on using organic flour from Vermont-based King Arthur Flour and his own sourdough yeast. Goebel had always been fascinated with bread. He decided to get more serious about baking after receiving cookbook Tartine Bread from the lauded San Francisco bakery. He started his own bread delivery service in South Austin eventually, which led to the brick-and-mortar.
ThoroughBread offers pick-up items, as well as delivery service. Its hours begin at 7 a.m. Tuesday through Sunday.
