The Brewer’s Table is still a few months away from its slated March opening on East 5th Street in Govalle, and it’s gearing up for business with a few key hires for its staff.
Topping that list is head baker Sandeep Gyawali of subscription-based Miche Bread, which focuses on organic sourdough breads with heritage grains. Nepal-born Gyawali is a self-taught baker who has won awards for his efforts to innovate the local grain and culinary scene. Miche began operations in 2009, developing bread for a New York bakery called La Boulangerie, that quickly earned local accolades. Gyawali will still operate Miche Bread while working for the restaurant.
Also joining the team is general manager Zach Sawyer and beverage director Brandy Compton. Sawyer joins from Josephine House, while Compton, a certified cicerone and sommelier and the first woman to join the team, has put in time at Sway, Barley Swine, and Perla’s.
The Brewer’s Table, which seeks to course food and beer, already secured local heavyweights Drew Durish (the former brewer for Live Oak Brewing Company) and chef Zach Hunter (formerly of Fixe) as part of the founding team. The forthcoming restaurant is still hiring for a few positions.
