HayleyCakes and Cookies, a bakery located known for elaborate decorations, is opening to a new location off South Lamar and Collier Street, with an opening date expected in August.
The original location on 2222 will remain open, but the new digs are four times larger, giving the bakery much-needed room to grow. “We often book up two to four weeks [in advance] around holidays,” said owner Hayley Callaway-Evans. “Hopefully we can take on more orders with shorter turnaround time. Plus right, now we have 23 people working in 1200 square feet so we can't even fit any more employees in there.”
The bakery attracted national attention for Callaway-Evans’s soothing cookie decorating Instagram videos, featuring smooth frosting and precise handwriting. She had been looking for the right location for the expansion since last summer. She plans to offering the same decorated cakes and cookies along with some new products, and has her sights on expanding to other cities if all goes well.
The bakery will be taking the place of Natural Epicurean Academy of Culinary Arts, a plant-based cooking school that opened in 2009 quietly shuttered earlier this year. It’s the same plaza as brunch spot Snooze and health food-focused trailer Picnik. Future plans for the academy are unknown, and phone and email messages went unanswered.
