Cedar Park sushi restaurant Soto is taking over Cantine’s former digs on South Lamar. Manager Craig Anderson confirmed the expansion to the Lamar Union building. The restaurant will have a new name, which isn’t known yet, but it should open sometime in August or early September.
Anderson told Eater that the unnamed restaurant will borrow dishes from Soto, as well as add different ones. He guesses there will be a fifty-fifty split between brand new and current items. Soto’s Japanese menu already spans the usual array: sushi, noodles, fish, lunch specials, sweets, and even dessert martinis.
Soto’s chef Andy Okamoto will oversee the new kitchen. He trained with his uncle in Kyoto, followed by a stint at Philadelphia's iconic Japanese spot Morimoto. He has been with the restaurant since it opened in 2013.
Just down the street from Soto’s new digs is Uchi, and a couple streets over are Lucky Robot Japanese Kitchen and omakase-only Otoko, both on South Congress.
After two years, Emmett and Lisa Fox decided to close Cantine this past May without any explanation. The couple still runs Hyde Park Italian restaurant Asti.
