Nadia Chaudhury is the editor of Eater Austin covering food and pop culture, as well as a photographer, writer, and frequent panel moderator and podcast guest.

With Mona Pita, owner Will Elman is all about hummus and pita, offered in a friendly atmosphere. The pop-up highlights hummus as “a standalone meal,” he said. “It’s a far cry from the cold stuff you find on the shelves at the supermarket.”

Mona’s hummus is simple and traditional, made with a lot of tahini, because it’s a vehicle for mix-ins and toppings, from meats (like beef), vegetables (like squash and zucchini), hard boiled eggs, and more. Every plate is served with cucumber salad. Elman is also offering pita sandwiches, like a recent one filled with lamb ragout.

For now, Elman serves Mona’s hummus and pitas at various pop-ups throughout the city. In the near future, he’s looking to set up a farmers market stand, and then a food truck. That will lead into an eventual brick and mortar.

Currently, find Mona Pita at Hops & Grain on Fridays from 12:30 p.m. to 5 p.m.
