Chicago’s Happy Lobster Truck Brings Maine Lobster Rolls to Austin

Happy Lobster, the Chicago seafood truck, is opening an Austin location this summer with lobster rolls on burger buns. The truck doesn’t have a set location, but expect to find it roaming throughout the city. It should open sometime during the first week of July.

Update, July 5: Happy Lobster’s Austin truck is now open, roaming the city. Check its Facebook page for dates, locations, and times.

Among Happy Lobster’s menu: a spicy version of its lobster roll with spicy mayonnaise and giardiniera, lobster grilled cheese sandwiches, fried fish tacos, and fried lobster macaroni and cheese bites, all made with seafood sourced from Maine.

The truck isn’t new to the city; it’s been rolling into town for SXSW’s SouthBites food trailer park for the past two years. This is, however, its first out-of-Chicago expansion from owners Alex Robinson, Tyler Cullitan, and Neal Bassett. The trio opened opened the original trailer in 2015. The Austin expansion won’t affect the Chicago truck.

Other places to find lobster rolls in Austin include Garbo’s restaurant and food truck, Dock & Roll (which teased a brick and mortar last fall), and Perla’s Seafood and Oyster Bar.
