Oddwood Ales, the brewery project that began under Adelbert’s Brewery, is gearing for a late summer opening with a taproom serving up American-style ales and pizza. The MLK brewery will create and serve up American saisons, pale and wild ales, and more.
Co-founder Taylor Ziebarth originally started Oddwood Ales as an experimental project while as head brewer at Adelbert's in 2014. As the head brewer, he brewed up experimental beers made with used wine barrels. He decided to spin it off into his own project in 2016. Joining him is his brother Brett as co-founder as well.
Oddwood’s taproom will include various lounges and outdoor patio, along with guest taps and bar-style pizza made in-house. The opening menu will feature four to five thin crust pies, with more to be added later. The brewery portion will feature American White Oak foeders meant for fermentation.
OPA Design Studio, the firm behind the looks of Live Oak Brewing Company, Still Austin Whiskey Co., and Twisted X Brewing Company, is working on Oddwood Ale’s space. The Manor address turning a former office building and nightclub into Oddwood's new space.
Adelbert's founder Scott Hovey opened the brewery in 2011, focusing on Belgian-style ales. It acquired a brewpub license last year, which meant guests could purchase bottles to-go.
