Punk rock diner Bombshell, from mash-up genius Callie Speer, is on track for an April debut. The new downtown restaurant will focus on fun and casual dishes for breakfast, lunch, and weekend brunch with table and counter service. The space will transform into a proper bar with food in the evenings.
Speer is fond of describing Bombshell as her unapologetic wild child," where the restaurant will serve as an extension of what she wants to make and eat. The chef shared some preview dishes with Eater. This means decadent migas kolaches, pancakes, ice cream, and burgers, all seen below.
Joining Speer’s team is pastry chef Britt Castro. Brandon and Zane Hunt, of Via 313, are investing in the restaurant, too. For Bombshell, Speer took over the last remaining Austin location of Wahoo’s Fish Tacos right in downtown Austin on Rio Grande Street.
Before Bombshell, Speer was the pastry chef of Geraldine's, Swift's Attic, and Parkside.
