Kerlin BBQ’s Dedicated Barbecue Kolache Trailer Lands This Weekend

It’s finally here: Kerlin BBQ’s barbecue-stuffed kolaches are legendary, and now smoked meats and pastry fans will be able to gorge on the goods with the newly-launched kolache trailer, opening this Saturday, February 4, starting at 9 a.m.

Kerlin introduced the barbecue kolaches back in 2014, and it quickly gained popularity. The trailer’s barbecue Czech pastry mashup flavors could potentially include chopped brisket and cheddar cheese, spinach and goat cheese, egg and pepperjack, sausages, and much more.

Pitmaster and owner Bill Kerlin had to pull back on the savory pastries last year, when it only offered the kolaches as occasional specials. Then he announced that he would open a separate kolache trailer.

Going forward, the kolache trailer will be open from Wednesday through Sunday, starting at 9 a.m. until sold out. The opening menu will include:

  • brisket and cheddar
  • smoked sausage, jalapeno, and cheddar
  • pork shoulder, pickles, and Monterrey Jack cheese
  • rotating specials which will include a vegetarian option

A staffer notes that they’re making a lot of kolaches. Keep an eye out on social media to see when the trailer will be open.
