Experimental Chicago Cocktail Bar The Aviary Is Popping Up in Austin

It’s taking over Nickel City for a private event

The Aviary, one of Chicago’s best experimental cocktail bars, is popping up for one night in Austin this month. The bar is known for conceptual drinks, like the Wake and Bake, a rye whiskey, coffee, and orange juice concoction served inside of an enclosed plastic bag filled with the scent of an everything bagel.

The Aviary’s Austin pop-up is taking place for one day in mid-November at Nickel City on East 11th Street in the late evening. Unfortunately, the event, which is sponsored by rum company Flor de Caña, is an invite-only experience. Leading the bar that evening will be the company’s brand ambassador Ashela Richardson.

Chicago chef Grant Achatz, who is behind three Michelin-starred restaurant Alinea, opened the bar in 2011. He and Alinea Group partner Nick Kokonas followed that up with the New York City branch of the bar in September. They told Eater over the summer that they're looking to expand Aviary across the world, with potential locations in Asia and Europe. Perhaps Austin is also on that long list.
