Smoked Burritos and Fried Alligator Coming to Stiles Switch BBQ

Meaty collaborations with chefs Philip Speer, Callie Speer, and Todd Duplechan for the restaurant’s holiday specials

Brentwood barbecue spot Stiles Switch BBQ & Brew’s annual meat-filled holiday tradition, 12 Days of Smoked Meats, is back for 2017, beginning on Tuesday, December 5. This time, the restaurant teamed up with local chefs for several of the meaty specials.

Bonhomie’s Philip Speer is whipping up the “smoked Brentwood burrito,” with the fillings to be announced. Lenoir chef Todd Duplechan is making smoked brisket and sausage gumbo (this collaboration makes sense since Duplechan and Stiles’ owner Shane Stiles are teaming up for a Southern smoked meats restaurant in Dripping Springs sometime next year). Holy Roller’s Callie Speer will work on biscuits served with smoked bacon gravy and pulled pork (the downtown diner’s Local sandwich is made with Stiles’ brisket).

“Our guest chef collaborations this year are part of us celebrating some of our good friends in the business,” co-owner Shane Stiles' wife Catherine told Eater. “We have so many talented friends in the culinary scene. These are true friendships we wanted to have come in, and just have a day of fun.”

Then there are the usual returning favorites from Stiles pitmaster Bill Dumas, like the chicken fried beef rib with tater tot casserole, smoked brisket meatloaf, and more. Another new addition is the smoked fried alligator.
