Austin is getting a new fast casual biscuit sandwich restaurant with the arrival of Bird Bird Biscuit on 2701 Manor Road. It is run by Thunderbird Coffee owner Ryan McElroy, along with the coffee shop’s former general manager Brian Batch, who is the chef. It’s set to open sometime in spring of 2018.
McElroy and Batch drew inspiration from Nashville biscuit sandwiches and Los Angeles’ sandwich shops. The buttermilk biscuit sandwiches, served for breakfast and lunch, will include ingredients like chicken sausages, bacon, fried chicken, fried eggs, cheese, and Sriracha mayonnaise.
Bird will preview its dishes with a pop-up at neighboring Italian food truck Patrizi’s on Manor Road. It will take place on Saturday, November 18, from 9 to 11 a.m.
Thunderbird currently has two locations: one near Bird on Manor Road and the other on West Koenig Lane in North Central Austin.
