Heidi Garbo, owner of Garbo’s Fresh Maine Lobster, launched Connor's Creamery, a soft serve food truck, now parked outside of the restaurant. Named after her 10-year-old son, the truck makes soft serve in eight flavors served on a rotating schedule, plus house-made Belgian waffles, a sundae, and floats with Maine Root Beer and Mexican Coke.
Connor’s soft serve flavor roster includes bubble gum, banana, blueberry, mango, strawberry, chocolate, butter pecan, and maple. Plus, a flavor burst machine runs a ribbon of flavor around the ice cream. The toppings range from familiar favorites (think marshmallows and sprinkles) to creative additions like candied pecans, maple syrup, and Nutella.
The vanilla and chocolate waffles are made by Garbo herself and can be served with ice cream and/or toppings. The sundae of the week is the result of a collaboration between Garbo and her son, Conner. Beverage offerings include coffee from Casa Brasil and hot chocolate.
The truck was originally piloted in late summer of 2016 but only recently adopted regular hours. There are plans to go mobile and offer catering in the spring. Garbo is hoping to participate in local farmer's markets in the near future too.
Connor’s Creamery is open from 6 to 10 a.m. (for waffle breakfast) and then 3 to 8 p.m. on Tuesdays to Fridays, from 10 a.m. to 8 p.m. on Saturdays, and 10 a.m. to 4 p.m. on Sundays. All of the truck’s ice creams are also available at Garbo’s.
