El Burro is the name of Austin’s newest Mexican restaurant from Vox Table owner Vincent Manguino and the rest of the team. It’s set to open in mid-September within Lamar Union.
So far, El Burro’s menu spans the expected Mexican fare. This includes tacos, enchiladas, and what is pegged as the restaurant’s own version of fajitas made with decadent options like bacon-wrapped shrimp, lobster tails, or plainer offerings like chicken or rib eye. There will be crudo and tostadas, and plenty of margaritas. There are plans for a patio, too.
The restaurant space was originally going to be chef David Garrido's restaurant, but Manguino took it over last summer. Meanwhile, Garrido is keeping himself busy with running the Radisson's hotel restaurant Dine.
Vox Table debuted mixed-use development Lamar Union in April 2015. Other spots include Alamo Drafthouse, Shake Shack, Caffe Medici, Delicious, Lick Ice Creams, and more. El Burro is currently hiring.
