Eater's Young Guns searches for the best up-and-comers in the food and drink industry across the country, and this year's semifinalist list, revealed today, includes three Austin names. The winners will be announced on June 28.
The nominations, which were open to the public, collected the most talented chefs, sommeliers, bakers, etc. pushing the envelopes in their fields all under the age of 30 or worked for less than five years. Learn more about all of the semifinalists over on Eater, but here’s a quick look at this year’s Austin crop:
— Susana Querejazu, executive pastry chef of Odd Duck and Barley Swine: She oversees the pastries and breads, where she keeps herself busy "always playing with new thoughts and ideas."
— Charles Zhuo, executive sous chef of Barley Swine: The move from South Lamar to Burnet Road didn’t stop him from experimenting with any and everything, from cricket miso to blood ice cream.
— Madelyn Kay, bartender at Vox Table: She has been racking up accolades, including this year's title of Miss Speed Rack Texas.
Rachel DelRocco, then-beverage director of Qui, was named an Eater Young Gun in 2015, andSteven Dilley of Bufalina the year before.
