Jodi Elliott’s dream of running a boozy bakery is now fully realized with the debut of Bribery Bakery in Mueller starting today. The shop is running with limited hours for now, but customers can still find pastries, cocktails, desserts, and savory dishes.
Elliott sees the Mueller spot as the dressed-up version of herself, whereas the Wells Branch outpost is her laid-back self. The fun and bright space is the original concept Elliott intended on when she wanted to open Bribery. Many of the decor details, like the bar chairs, decorated glasses, and chandeliers, were stored in her home, with hopes of using it for the shop.
Bribery’s mornings will be dedicated to grab-and-go items like pastries and coffee. The lunch menu will be available from 11 a.m. to 6 p.m., with dishes like chicken and dumplings, avocado hummus toast, and kid-friendly macaroni and cheese and pepperoni pizza pull apart rolls.
The concentrated cocktail list includes drinks named after women. Look out for the Franny with vodka, blood orange, bubbles, and rosemary; and the Debbie with butter rum, pineapple, and sherry. There will also be beer, wine, and coffee. The special "after school" happy hour includes two dollars off any drinks by the glass, and $1.50 off pastries from the case, which runs Tuesday through Friday, 3 to 6 p.m.
When evening hours are added later, the bakery will transform into a small bites restaurant, with savory items like popovers with sides, cheese, and meat boards. Plated desserts will change around, but mainstays include the warm brownie and Billie’s sundae.
For February, Bribery is open from 7 a.m. to 6 p.m. Thursday, February 4 through 5, Thursday, February 11 through 12, and then every following Wednesday through Friday for the rest of the month. The bakery will also be open on the weekends from 8:30 a.m. until 3:30 p.m. The bakery is still looking for more staff.
