Salt & Time chef Josh Jones is leaving the butcher shop and restaurant to move down to Santiago, Chile. He will join Texas-style El Camino BBQ, run by Michelle Letelier, as a chef. His last Austin day will be in late March. A press release teases the possibility of Salt & Time pop-ups in the South American country.

Taking his place will be sous chef Raul Chavarria. Co-owner Ben Runkle will dive back into related roles included menu development, preservation, and the such. Jones will still host his final Salt & Time beer dinner with Live Oak Brewing on Sunday, February 28 benefitting Fresh Chefs Society, featuring elk summer sausage, chicken liver, and more.

Jones helped open Salt & Time’s brick and mortar, and has been part of the staff for nearly five years. He took over for chef Alex Jackson in 2013, who left with his wife Jen, who was then the chef de cuisine of Josephine House.

Last year, Salt & Time hosted actor Jesse Plemons, who shadowed the butchers to prepare for his role in the second season of Fargo.
