Pieous, the southwest Austin pizza staple, is expanding with a takeout coffee and pastry outpost, as originally reported by Community Impact. Owners Josh and Paige Kaner told Eater they plan on opening Pie-é-tea (pie and tea) on Friday, February 5, bright and early at 6 a.m.
The signature pastry will be the Kouign Amann, along with croissants, morning buns, chocolate twists, pain aux raisin, and more. Everything will be made with the same aged sourdough starter used for the pizza dough and bread. They might incorporate the famed pastrami, too, in the future.

Austin Roasting Co. is creating a special coffee blend for Pie-é-tea, made with nine different beans. As for smoothies, there will be dairy and dairy-free options, with a few caffeinated ones. Customers will be able to build their own, too. The takeout shop will be open daily at 6 a.m.
The Kaners decided to open up the bakery and coffee shop because they wanted to offer "a unique and special morning option and experience based on the same principles and devotion on which Pieous was founded," they said. They wanted to do something new with the third anniversary of the pizzeria approaching, too.
