Jesse Herman is leaving hospitality group New Waterloo, as reported by Austin 360. He is still a partner in the company, but he won't work on daily projects. He said to the publication:
After helping to establish New Waterloo, I have decided to leave to pursue other interests [...] I’m excited about what the future holds for both Austin and myself. I’m not going anywhere; Austin is home.
Herman opened La Condesa in 2009, followed by Sway in 2012, with chefs Rene Ortiz and Laura Sawicki at the helm, along with restaurant partner Delfo Trombetta. Both Ortiz and Sawicki left the group in 2013. New Waterloo was previously known as Violet Crown.
The company oversaw Sway (which is set to expand with two new locations), La Condesa, South Congress Hotel (with Central Standard, Cafe No Se, Manana, and soon to be home of Paul Qui’s Otoko), Hotel Ella, Pao in Miami. Forthcoming projects for the group include the Arnold apartment complex with two new Italian restaurants and French-American restaurant Chez Nada in the Northshore project in downtown Austin.
