Veracruz All Natural is much lauded for the beloved tacos, fantastic migas and everything else from owners and sisters Reyna and Maritza Vazquez, who named the truck after their hometown in Mexico. Taco fans of the trailers include Aaron FranklinEmeril Lagassetaco journalists Mando Rayo and Jarod Neece, and many others.

The sisters operate three trailers—the original on East Cesar Chavez, within Hotel Vegas on East 6th Street, and on Manchaca Road with Radio Coffee. Next on the docket is the highly anticipated Round Rock brick and mortar, after dreams of an Austin restaurant were shattered.

In honor of Breakfast Week, here's a handy infographic that breaks down what a busy Saturday morning looks like for Veracruz by the numbers. Over 700 eggs were used for two trailers' worth of tacos, and it takes just a minute longer to make the La Reyna taco (made with egg whites and a slew of vegetables) than the migas one.
