Arizona health food chain True Food Kitchen is poised to open its first Austin location this February, in the Seaholm complex, near Trader Joe's. Tapping into the same culinary zeitgeist that transformed kale from garnish to entrée, True Food's menu was developed in consultation with health guru Dr. Andrew Weil and offers a diverse array of nutrition-forward foods.

Update, January 27: True Food Kitchen's opening date is Sunday, February 28. Update, February 25: Turns out the opening date has been delayed to mid-March now, according to a rep.

Update, March 10: True Food Kitchen's final opening date is perfectly timed to the end of SXSW: Monday, March 21.

The menu something for every diet from vegetarian edamame dumplings, paleo-friendly grass-fed bison burgers, to vegan "TLT" sandwiches. Additionally, the drinks menu emphasizes sustainable, organic, local, and biodynamic beer, wine, and spirits, including a "Cucumber Citrus Skinny Margarita."

Original set to open in mid-2015, True Food pushed back the debut date to Tuesday, February 23. To that end, there’s a hiring fair January 18 through 23 and January 25 through 30, from 9 a.m. to 5 p.m.

True Food is the brainchild of restaurateur Sam Fox, whose Fox Restaurant Concepts has a property, North Italia, at the Domain. True Food’s first location opened in Phoenix in 2008, and there are now 11 locations across the southwest, with six more shops opening across the country this year.
